Ingredients:
2 tbsp butter
2 tbsp plain flour
500ml cold water
salt and freshly-ground white pepper, to taste
Method:
Melt the butter in a pan, scatter the flour over the top and stir to form a roux. Whisk in the water and cook until thick, stirring constantly. Season to taste with salt and freshly-ground white pepper.
Typically this is used as a base for other sauces, such as Admiral sauce.
