Achiote Paste

Method:

Combine the annatto seeds, cumin seeds, oregano, allspice berries and salt in a coffee grinder or spice mill and grind to a powdery consistency.

Add the garlic and lime juice to a small bowl then mix in the spice powder. Blend thoroughly then transfer to a small lidded jar and store in the refrigerator.

Typically this is used for grilled or baked seafood.
