Benes y Fryed

Take benes and ſeeþ hē almoſt til þey berſten. take and wryng out þ9 watr clene. do þ9to Onyons y ſode and y mynced. and garlec þ9wt. frye hem ī oile. oþ9 ī grece. et do þ9to powdor douce. et sūe it forth.



Modern Redaction


Ingredients:

450g dried split broad (fava) beans
950ml beef stock
2 medium onions, finely chopped
butter for frying
2 tbsp Powder douce
2 cloves garlic

Method:

For best results, soak the beans over night in water. The following day, drain the beans, add to a saucepan and simmer in the beef stock for about an hour until they are nearly soft. Meanwhile fry the onion and garlic in butter until soft. Add these to the beans and simmer for a further 30 minutes.

Mash the beans with a fork, add the powder douce and serve immediately.
