English Translation

Wild carrots are much more intensely flavoured than their farmed descendants. As a result, the addition of just a few makes quite a difference to the flavour of this pudding.

Ingredients:

100g carrots, grated
50g wild carrots, grated
150g potatoes, grated
1/2 tsp bicarbonate of soda
180g white sugar
150g plain flour
240g raisins
100g butter
pinch of salt
1/2 tsp cinnamon

Method:

Mix all the ingredients together then transfer to a 1.2l pudding basin that's been well greased. Place greaseproof paper over the top then cover in a double layer of foil and tie securely.

Place the pudding either in a steamer or on top of a saucer in a large saucepan, filling it 3/4 full with boiling water. Steam for 3 hours before unwrapping and turning the pudding onto a serving plate.
