Ingredients:
2 eggs, separated
2 tbsp freshly-grated Parmesan cheese
2 tbsp breadcrumbs
1.2l chicken consommé or beef consommé
salt and freshly-ground white pepper, to taste
freshly-grated nutmeg, to taste
Method:
Add the egg whites to a clean and dry bowl and beat until stiff. Beat together the yolks then beat into the egg whites. Fold in the cheese and breadcrumbs then season with nutmeg to taste.
Place the consommé in a pan and heat just to boiling point then gradually add the egg mixture, one spoonful at a time. Bring to a simmer and cook for about 6 minutes, or until the egg mixture is done. Carefully ladle into warmed soup bowls and serve.
