This is a classic very hot salsa from the Yucatan region of Mexico that is typically smeared very thinly over tacos before use.
Ingredients:
4 habanero chillies, charred over a flame, peeled, de-seeded and mashed to a paste
juice of 4 limes (key limes are best)
4 garlic cloves, baked, peeled and mashed
8 tbsp olive oil
pinch of salt
Method:
Making this salsa is simplicity itself. Add all the ingredients to a small bowl then mix thoroughly to combine.
Cover with clingfilm and refrigerate for at lest 2 hours to allow the flavours to combine.
