Watermelon Agua Fresca

Aguas Frescas translate to 'cool waters'. These are often made from melons such as watermelon, cantaloupe and honey-dew. This Mexican refreshing beverage, is perfect for a warm day.

Ingredients:

1.35 to 2.25kg seedless watermelon, flesh cut into cubes
125ml water
2 tbsp sugar (or as needed)

Method:

Using a blender, combine the watermelon and water (you may need to do this in batches depending on your blender's size). Pulse to chop then render the mixture to a smooth purée.

Sit a fine-meshed sieve over a large bowl then pour in the melon purée. Allow it to drain into the bowl, helping by pressing down on the pulp with the back of a spoon.

Once all the liquid is in the bowl taste and adjust the sweetness with sugar.

Turn into a pitcher then chill in the refrigerator for at least an hour before serving.
