Walnut Atayef (Walnut Pancakes) is a traditional Lebanese recipe for a classic dessert of yeasted pancakes stuffed with a mix of sugar, walnuts and orange flower water that are baked and dipped in hot atter syrup before serving. Ingredients:
150g ghee (or butter)
250g walnuts, finely chopped
100g sugar
2 tbsp orange flower water
1kg medium sized atayef (pancakes) either home-made or shop-bought
750ml atter syrup (made with orange flower water)
Method:
Thoroughly mix the sugar, chopped walnuts and orange flower water in a bowl.
Prepare the atayef (pancakes) according to the recipe and only fry on one side. Use the walnut mixture to stuff the pancakes (about 2 tbsp on the uncooked side) then fold over and pinch the edges to seal. Arrange the filled pancakes on a greased baking tray, brush them with the ghee then transfer to an oven pre-heated to 180°C and bake for about 12 minutes.
In the meantime, heat the atter syrup then pour into a bowl. Dip the cooked pancakes in the hot syrup and serve immediately.
