This is the classic Arabic syrup that is typically poured over most sweet things. The syrup is used for a number of Levantine and Middle Eastern pastries and treats and it keeps very well if stored in the refrigerator. It can be prepared with rose water, as here or with orange blossom water.
Ingredients:
600g granulated sugar
360ml water
1 tbsp lemon juice
1 tsp rose water (or orange blossom water)
Method:
Combine the sugar and the water in a pan. Heat gently to dissolve then add the lemon juice and bring the mixture to a boil. Cook, stirring occasionally, for about 10 minutes, or until the syrup thickens slightly.
Take off the heat and allow to cool a little then add the rose water and set aside to cool completely. Bottle and store until needed.
