Vizcaina is a traditional Basque chilli sauce that's traditionally served with salt cod. But it also works with any strongly-flavoured fish and white meat such as chicken.

Ingredients:

250g onions
50g choricero (or ancho or red devil) chillies, soaked
75g parsley, finely chopped
3 garlic cloves, finely sliced
1 tsp paprika
250ml chicken stock
salt and pepper to taste
olive oil to fry

Method:

Sauté the onions in the olive oil until soft, then add the garlic, paprika and chillies and simmer for a few minutes. Place the fried ingredients in a blender along with the stock and finely-chopped parsley and blend until smooth.

Season with salt and pepper then store in the fridge in a sealed jar until needed (it will last about 2 weeks).
