Piccata is a method of preparing food: meat is sliced, coated, sautéed and served in a sauce. The dish originated in Italy using veal (veal piccata). It can also be made with chicken, pork, and turkey (as here).

Ingredients:

500g turkey breast
60ml lemon juice
60ml olive oil
2 tbsp capers, chopped (with their liquid)
2 garlic cloves, crushed
freshly-ground black pepper, to taste
4 soft bread rolls, halved lengthways
4 slices of mozzarella cheese
8 lettuce leaves
slices of 1 red bell pepper


Method:

In a bowl, combine the lemon juice, olive oil, capers (with juice) and black pepper. Slice the turkey breasts in half lengthways then place in a shallow dish and pour over the marinade. Turn to coat evenly then cover and set aside in the refrigerator to marinate over night.

Pre-heat your barbecue. When the coals are hot, add the turkey breast pieces. Cook for about 5 minutes then turn over and cook for about 5 minutes more on the other side, or until the turkey is cooked through.

Move the turkey to a cooler part of the barbecue then add the rolls, cut side down. Grill the rolls until nicely toasted then take off the barbecue. Slice the turkey breasts then use to fill the rolls. Top with the mozzarella cheese, lettuce and red bell peppers. Cut each roll in half and serve.
