Ingredients:

4 thick slices of crusty white bread (or 1 medium ciabatta loaf)
3 tbsp olive oil
250g leftover cooked turkey, torn into strips
6 rashers of streaky bacon
1 large cos or romaine lettuce, leaves separated
medium-sized block of Parmesan or Gran Padano cheese, shaved with a potato peeler
1/2 batch Caesar salad dressing
salt and freshly-ground black pepper, to taste
toasted bread croutons, to garnish

Method:

Cut the bread into large croutons, spread over al large baking tray and drizzle over 2 tbsp of the olive oil. Rub the oil into the surface of the bread and season lightly with salt. Transfer to an oven pre-heated to 180°C and bake for about 8 minutes, turning over half way through, or until evenly browned. Remove from the oven and set aside to cool.

Grill the bacon until crisp then crumble. Heat a wok, add a little oil then add the strips of turkey. Toss to warm through then turn out. Tear the lettuce leaves into large pieces. Combine the turkey, lettuce and croutons in a large bowl and toss to combine. Add the majority of the dressing and toss to combine. Top with the crumbled bacon, drizzle over the reserved marinade then top with the cheese shavings.

Serve immediately, garnished with the bread croutons.
