Tulumbe is a traditional North Macedonian recipe for a classic snack or dessert of fried flour and egg pastry dipped in a simple syrup flavoured with lemon juice. The full recipe is presented here and I hope you enjoy this classic North Macedonian version of: Tulumbe.

Ingredients:
500ml water
200ml oil
500g plain flour
6 eggs
juice of 1/2 lemon
1 vanilla pod, split lengthways
For the Syrup:
500ml water
800g sugar
juice of 1 lemon
oil for deep frying
Method:
Combine the water and oil in a pan, add the vanilla pod and bring to a boil. Remove the vanilla pod then blend in the flour, and lemon juice mixing constantly. Reduce to a simmer and continue cooking for about 10 minutes, or until the mixture is smooth and the paste is sticking slightly to the base of the pan. Take off the heat and allow to cool slightly then beat in the eggs, one at a time. Ensure that you mix thoroughly after each addition.
Add the oil to a wok, deep fryer or deep pan. When it reaches about 180°C spoon the paste into a piping bag fitted with a large star-like nozzle. Pipe pieces about 6cm long into the oil and fry on all sides until nicely brown.
In the meantime, combine the sugar, water and lemon juice in a pan. Bring to a simmer and cook for 10 minutes then take off the heat and set aside to cool. Drain the pastry pieces, pour the cooled syrup over the warm pastries and set aside to cool completely before serving.
