Ingredients:
500g pot of curds
250g Sour cream
60ml Milk
12 Eggs, separated
120g granulated sugar
160g Raisins
200g Flour
1 Vanilla pod
1 strip of Lemon peel
1 strips of Orange peel
Method:
Pre-heat your oven to 170°C.
Split the vanilla pod along the middle and scrape out the seeds.
Combine the curds, sour cream, egg yolks, lemon and orange peels and vanilla seeds in a bowl, beating them until smooth.
Add the egg whites to a clean and fry bowl, beating wit the sugar and salt to create a snow.
Sift the flour into a bowl, then add to the curds mixture, alternating with the beaten egg whites.
Once the egg whites and flour have been incorporated mix in the raisins.
Brush a large baking dish with butter and sprinkle with flour. Fill the mixture into the mould and bake at 170°C until golden brown.
Then tear the smarrows into large pieces with 2 spoons and serve.
