Ingredients:
3.8l ripe tomatoes
12 large onions
100g salt
12 red bell peppers, de-seeded and cut into very small dice
2 chillies cut into very small dice
12 pickled gherkins cut into very small dice
1 tbsp celery seeds
1.8kg sugar
1l vinegar
Method:
Grind the tomatoes and onions together to form a paste. Add salt and mix in. Cover the resultant mixture with water and allow to stand for 10 minutes. Drain-off the water then add all the remaining ingredients. Mix well then put in a large pot, bring to the boil and cook for 15 minutes. Take off the heat and spoon into prepared jars that are sitting in a bath of hot water. Seal the jars and store.
Like all pickles, allow at least 2 weeks for the flavour to develop.
