Szalonnas Savanyu K'pszta (Sauerkraut with Bacon) is a traditional Hungarian recipe for a classic dish of sauerkraut cooked with bacon and paprika, with the cooking liquid turned into a veloute sauce. Place the sauerkraut and bacon joint in a pan. Sprinkle the paprika over the top then add just enough water to cover. Bring the mixture to a boil, reduce to a simmer and cook for 45 minutes.
Remove the bacon joint then drain the sauerkraut. Use the cooking liquid to make a velouté sauce then return the sauerkraut to the pan along with 300ml of the sauce. Stir in the sour cream and heat through (but do not allow to boil).
Slice the bacon then serve the sauerkraut with the bacon slices on top.
