Ingredients:
1 onion, finely chopped
300g potatoes, peeled and diced
500g frozen peas
1.5l vegetable stock
150g streaky bacon
300g mushy peas (tinned)
1 tbsp olive oil
salt and freshly-ground black pepper
Method:
Heat the oil in a large pan, add the onion and fry for about 5 minutes, or until soft but not browned. Add the potatoes and fry for 2 minutes then stir in the stock and frozen peas. Bring the mixture to a boil the reduce to a simmer, cover and cook for 10 minutes.
As the soup is simmering place the bacon rashers under a grill and cook until crisp. Drain on kitchen paper then cut into small pieces (these are your 'scabs').
When cooked, take the soup off the heat and allow to cool slightly. Purée in a blender or food processor until smooth (you may need to do this in batches) then return to a pan and add the mushy peas. Stir to combine, adjust the seasonings to taste, and allow to heat through. Ladle into warmed soup bowls, sprinkle some of the bacon 'scabs' over the surface and serve.
