Swakop-Spargeltoast (Swakop Asparagus Toast) is a traditional Namibian recipe for a classic starter or savoury snack of asparagus served on toast with ham, cheese and tomatoes. In Namibia, asparagus comes from the coastal town of Swakopnund, where it grows in the dry river bed of the Swakop. Namibia is famous for its blanched (white) asparagus spears.
Ingredients:
500g Swakop (white) asparagus
4 slices of cooked ham
4 slices of Gouda cheese
4 slices of white bread
2 tomatoes
butter
melted butter, to drizzle
parsley
freshly-ground black pepper, to taste
salt, to taste
Method:
Wash the asparagus then bring a pan of salted water to a boil, add the asparagus and cook for between 10 and 15 minutes, or until tender. Take off the heat and set aside to cool in the boiling liquid then drain and split the asparagus spears in half lengthways.
Toast the bread slices and spread with the butter. Slice the tomatoes thinly and arrange on top of the bread. Sit the ham and on top then add the asparagus. Drizzle over the melted butter and season to taste then lay the cheese slices over the top.
Place under the grill until the cheese begins to melt, garnish with chopped parsley and serve hot.
