This is a Scottish classic. Potatoes, onions and corned beef cooked in milk.
Ingredients:
6 large potatoes, peeled and cubed
240ml milk
15g butter
1 large onion, roughly chopped
350g corned beef, cubed
salt and black pepper, to taste
Method:
Add the potatoes and milk to a saucepan. Bring to a boil then reduce the heat to a simmer and cook until the potatoes are tender (about 25 minutes).
Meanwhile melt the butter in a frying pan, add the onions and fry gently until soft and translucent (but not coloured). When the potatoes are done add the fried onions and the corned beef. Stir the mixture to combine then continue cooking for a further 10 minutes, lightly mashing the potatoes as you go.
Take off the heat, mash the mixture fully then season with salt and black pepper and serve.
