Stir-fried Pork with Bamboo Shoots

Ingredients:

225g lean pork, boned and thinly sliced
1 tsp rice wine (or dry sherry)
2 tbsp soy sauce
3 tbsp vegetable oil
1 garlic clove, finely sliced
275g tinned bamboo shoots, drained and thinly sliced
2 tsp vinegar
shredded spring onion, to garnish

Method:

Add the pork to a bowl along with the sherry and 1/2 tbsp soy sauce. Mix to combine then set aside to marinate for 30 minutes.

Meanwhile, heat the oil in a wok, add the garlic and fry until golden brown then remove from the wok with a slotted spoon and discard. Add the pork to the pan and stir-fry for 2 minutes before adding the bamboo shoots, the remaining soy sauce and the vinegar. Stir-fry for about 30 seconds to heat through and serve immediately.
