lightly-stewed sea plantains in a cream sauce
Ingredients:
250g sea plantain leaves (or use sea asters)
25g butter
30g shallots, finely diced
30g bacon, finely diced
50ml single cream
Salt and freshly-ground black pepper, to taste
Lemon juice
Sea lettuce (to garnish)
Dill sprigs, to garnish
Method:
Thoroughly rinse the sea plantain leaves then spread out on kitchen paper to dry.
Set a pan over medium heat. Add the bacon and fry until nicely browned. At this point add the butter and shallots.
Continue cooking, stirring, until the shallots lose their bite (about 2 minutes).
Pour in the cream and stir through the sea plantain leaves. Cook for about 2 minutes more, or until the leaves have wilted.
Season to taste with salt, freshly-ground black pepper and lemon juice.
Arrange on a warmed serving plate, ensuring that the sea plantain is on top.
Garnish with the sea lettuce and a few sprigs of dill and serve as an accompaniment.
