Sri Lanka Style Jackfruit Seed Curry

Method:

Place the jackfruit seeds in a pan, cover with plenty of water bring to a boil and cook for 25 minutes.

Take off the heat and set aside to cool. When cool enough to handle drain the jackfruit seeds and slowly peel away the white skins.

Set a pan over medium heat. Once hot add a little oil and use to fry the onion for about 10 minutes, or until starting to colour.

At this point add the garlic, ginger, peeled jackfruit seeds, water, tomato purée, and the garam masala. Mix well to combine then bring to a simmer and cook about 10 minutes.

Stir in the coconut milk and spinach. When the spinach has wilted, season to taste with salt and freshly-ground black pepper and enjoy with rice, naan, chapati or pita bread.
