Ingredients:

280g basic quick mix
6 tbsp sugar
2 eggs
160ml milk (or buttermilk)
4 tbsp oil
100g cooked pumpkin, puréed
1 tsp ground cinnamon
1 tsp freshly-grated nutmeg
60g chopped nuts

Method:

Add the basic quick mix to a bowl. In a separate bowl mix together the sugar, eggs, milk and oil. Add the wet ingredients to the dry ingredients and stir until just moistened (the batter will be lumpy, don't worry, it's over-mixing that destroys muffin batters).

Gently stir in the pumpkin purée, spices and nuts then spoon the batter into greased and floured muffin cups, filling no more than 3/4 full. Transfer to an oven pre-heated to 200°C and bake for about 15 minutes, or until the muffins are well risen, golden brown and cooked through.

Allow the muffins to cool in the tin for 5 minutes then turn out onto a wire rack to cool. Serve warm.
