Ingredients:
250g flour
2 eggs
500ml milk
salt, to taste
150g bacon
fat, for frying
Method:
Sift the flour into a large bowl then form a well in the centre. Lightly whisk the eggs and a little of the milk and pour into the well. Stir to combine then slowly whisk in the remaining milk until you have a smooth batter. Season with the salt and set aside.
Slice the bacon as finely as you can then melt a little fat or butter in a pan and use to fry the bacon until golden brown. Add the batter and slowly fry the thick pancake until golden brown. When it's done on one side, cover the pan with a plate then invert the pancake onto this and slide back into the pan. Serve hot, cut into wedges.
