Soufflé Omelette

Ingredients:

2 eggs, separated
2 tbsp milk
salt and freshly-ground black pepper
knob of butter, for frying

Method:

Whisk together the egg yolks and milk until smooth then season to taste with salt and black pepper. Whisk the egg whites until they form peaks then fold into the egg yolk blend.

Heat the butter in a small non-stick pan and when foaming add the egg mix. Cook, without stirring, until the base of the omelette is golden brown then place under a hot grill and cook until browned on top and heated through.

Score the puffed-up omelette down the centre using a sharp knife (do not cut through), add your choice of topping to one half of the omelette (truffles are excellent here and cheese is another classic) then fold the other half of the omelette over and serve.
