Sočni Kolač (Rich Cake) is a traditional Bosnian recipe for a rich dessert cake of a walnuts, raisins and coconut base served topped with whipped cream. The full recipe is presented here and I hope you enjoy this classic Bosnian version of: Rich Cake (Sočni Kolač).
Beat the eggs in a bowl with a whisk, then beat in the oil and fold in the walnuts, raisins and coconut. Mix in the baking powder then pour the resultant mixture into a lightly oiled tin (it should be fairly thin, maybe about 12mm thick).
Transfer the baking tin to your pre-heated oven and bake until the edges are starting to brown (about 15 to 20 minutes).
Whilst the cake is baking, combine the sugar and water in a saucepan. Bring to a simmer over medium heat and cook until the mixture starts to become syrupy.
When you remove the cake from the oven, pour over the syrup whilst the cake is still hot.
Turn the oven off and put the cake back inside of the oven to cool. After about 30 to 45 minutes, take it out of the oven, allow to cool then transfer to your refrigerator and chill for an hour or two.
Pour the whipping cream into a mixing bowl and whip until stiff peaks form, then add the icing sugar and the vanilla. Whip a little more to blend.
Take the cake out of the refrigerator and gently spread the whipped cream on top.
