Just to show that I really can be a little obsessive about collecting recipes, I caught this recipe for a quick family-friendly meal on Zambianews (don't ask). But I simply had to write it down and typed it straight into my laptop. It's languished amongst a pile of other notes and files that I never really got around to editing, but finally I'm sorting through the odds and sods, so here's the recipe.
The only really African twist on this recipe was suggesting white maize kernels or cooked black-eyed peas as a substitute for the frozen peas.
Ingredients:
300g left-over cooked white long-grain rice
2 tsp vegetable oil
2 eggs, lightly whisked
2 bacon rashers, chopped
1 carrot, peeled and diced
2 shallots, trimmed, finely sliced
100g frozen peas, thawed
1 tbsp soy sauce
Sesame seeds, to serve
spring onions, sliced, (plus extra, to garnish)
Method:
Heat oil in a non-stick wok or large frying pan over medium heat. Add eggs. Swirl over the base to form an omelette. Cook for 2 minutes or until set. Transfer to a chopping board and allow to cool until it can be handled before rolling and slicing into short, thin, strips.
Add the bacon pieces to the wok. Cook for 4 minutes until lightly golden. Now add the carrot and stir fry for 2 minutes.
Scatter over the shallots, spring onions, peas and rice. Cook, stirring, for 3-4 minutes then add in the shredded omelette and sprinkle over the sauce. Stir the mixture, tossing occasionally, until everything is heated through.
Turn into a warmed serving dish, sprinkle with sesame seeds and top with extra spring onions.
