Ingredients


1kg calf's liver
5 tomatoes, blanched, peeled and cut into cubes
1 onion, finely chopped
3 garlic cloves, crushed
2 tbsp olive oil
a little dry white wine
120ml chicken stock
oil for frying
salt and freshly-ground black pepper, to taste

Method:

Dice the liver and fry in hot cooking oil with the onions and garlic until just done to your liking.

Drain away the excess oil then add the tomatoes, wine, olive oil, stock and seasonings. Cook over low heat until the sauce thickens.

Serve the liver in a ring of boiled rice.
