Sierra Leone Rice Akara is a traditional Sierra Leonean recipe for a classic street food dish of sardine, flour and spring onion fish cakes flavoured with pepper and maggi cubes that are deep fried to cook. Ingredients:
20 ripe banana
200g golden caster Sugar
1 tsp ground Nutmeg
900g Rice flour
Oil
2 tsp Baking powder
pinch of salt
Method:
Mash the bananas thoroughly with your hands. Add the rice flour and blend until completely combined.
Now add the sugar, baking powder, salt and nutmeg. Mix thoroughly to combine. Cover the bowl and set aside to rest for 30 minutes.
In the meantime, heat oil in a deep fryer or large pot. Once the oil is hot drop in the batter by the tablespoon. Don't over-crowd the pan and fry for about 3 minutes then flip over and fry for about 3 minutes more. Once done the fritters will be nicely puffed and nicely coloured.
Remove with a slitted spoon and drain on kitchen paper as you cook the next batch. Serve with a pepper or peanut dipping sauce.
