This is the classic semolina pudding (essentially a thick porridge), served in Russia as a breakfast topped with jams, preserved fruit or honey.
Ingredients:
80g semolina
720ml milk
1 tbsp butter
2 tsp sugar
pinch of salt
jam, preserved fruit or honey, to serve
Method:
Add the milk to a pan, bring to a boil then gradually stir in the semolina, a little at a time. When all the semolina has been incorporated add the butter, sugar and salt. Return the mixture to a boil then reduce to a low heat and cook for about 12 minutes, stirring frequently.
By the end the mixture should become thick, like porridge. Spoon into bowls, top with a tablespoon or two of jam, honey or preserved fruit and serve immediately.
