Sea Aster Fritters

Ingredients:

400g plain flour
salt and freshly-ground black pepper, to taste
knob of butter
500ml milk
2 large eggs
12 sea aster leaves

Method:

Prepare a batter by whisking together the flour and milk. Season with the salt and better then stir-in the eggs. Set aside for 2 hours to rest. Meanwhile, heat oil in a pan or fryer until very hot. Dip one or two sea aster leaves in the batter and drop in the hot oil.

Fry until crisp and golden then serve either as a starter or as an accompaniment to fish.
