Salsa Verde de Tomatillo (Mexican Green Tomatillo Salsa)

Salsa verde is a classic among Mexican sauces that's essential to master. It requires minimal ingredients, is easy to prepare, and packs a big flavour punch.
Ingredients:
5 green tomatillos (large)
½ onion (white or yellow, but not sweet)
2 garlic cloves
5 serrano chillies (or use jalapeños for less heat)
1 tsp salt (or to taste)
Method:
Boil together the tomatillos, garlic, onion, and chiles in a pan until the tomatillos change colour and are tender (about 8–10 minutes). Take care not to over-cook them.
Remove the ingredients from the water, reserving some of the vegetable. Blend the tomatillos, garlic, onion and chillies on your food processor's lowest setting with the salt until smooth (about 60 seconds). Add the reserved stock a little at a time, blending until the salsa is smooth and pourable but not runny. Taste and adjust for salt, if necessary.
Serve immediately or refrigerate until ready to use. Enjoy on tacos, eggs, barbecued meats, or straight from the spoon.
