With a few simple ingredients, this tangy salsa con tomatillo verde is one of the easiest to make and is loaded with flavour.

Ingredients:

10 green tomatillos, husks removed
5 arbol chillies
1 ½ tbsp white distilled vinegar
1 tbsp sea salt (or to taste)

Method:

In a small pot, cover tomatillos with water and bring to a boil over medium-high heat. Cook the tomatillos until soft but not falling apart (about 5–8 minutes after the water comes to a boil). Remove the tomatillos and put in a bowl (reserve the liquid).

In a separate comal or flat heavy-based pan, lightly toast the chillies over medium heat for about 1–2 minutes or until they release their aromas. Move frequently to avoid burning. Remove from heat and set on a plate to cool.

Transfer the boiled tomatillos and toasted chillies to a blender, add the vinegar and salt and process on the medium speed setting for 60 seconds Add water from boiled tomatillos until salsa reaches desired consistency, if necessary.

Enjoy immediately with chips or serve over your favourite tacos, tostadas, taquitos, or burritos. Store in the refrigerator, where it will keep for up to a month.
