This beautiful yellow cherry tomato salsa combines the sweetness of yellow cherry tomatoes with the spiciness of arbol chillies peppers for a delicious salsa that' goes with just about everything.
Ingredients:
275g yellow cherry tomatoes
5 arbol chillies (you can use 10-15 if you want the salsa spicy)
1 tbsp distilled white vinegar
1 tbsp sea salt (or to taste)
Method:
In a comal or flat pan over medium heat, lightly toast chiles for about 3 minutes or until they release their aromas. Move frequently to avoid burning. Remove from heat and transfer to a small saucepan.
Add the tomatoes to the chillies in the pan. Cover with water then bring to a boil over medium heat. Continue boiling until the tomatoes start to split. Drain and transfer to a blender (reserve the cooking water).
Add the salt and vinegar to the blender then process on medium speed for 60 seconds. If the mixture is a little thick and some of the reserved boiling water a tablespoon at a time until you attain the desired consistency.
