Salade du Tchad (Chadian Salad)

Salade du Tchad (Chadian Salad) is a traditional Chadian recipe for a classic vegetarian salad of rice mixed with cucumber, bananas, raisins and almonds in a spiced honey and lemon dressing that can be served as a starter or an accompaniment. Ingredients:

150g long-grain brown rice
1 small cucumber
2 bananas
50g raisins
1 tbsp almonds, chopped
4 tbsp olive oil
4 tsp lemon juice
finely-grated zest of 1 lemon
1 tsp salt
1/2 tsp ground coriander seeds
1/2 tsp ground cumin seeds
1/2 tsp cayenne pepper
1 tsp honey

Method:

Wash the rice throughly, then cook using the perfect steamed rice recipe. Once cooked set aside to cool.

Slice the cucumber finely then peel and slice the bananas. Combine the rice, cucumber, bananas, raisins and almonds in a salad bowl. Mix gently to combine.

For the dressing, whisk together the olive oil, lemon juice, lemon zest, salt, spices and honey in a bowl. Pour this dressing over the salad ingredients.

Toss to mix then chill in the refrigerator for at least 30 minutes before serving.
