My wife really enjoys refried beans, so, as soon as I got some carlin peas with their nutty, earthy, flavour I wanted to try them as refried beans. You start with cooked beans in this recipe and you can used tinned or jarred beans. If you’re starting from dried beans, soak them in plenty of water over night then drain, rinse, set in a saucepan, cover with water then bring to a boil, reduce to a simmer and cook for about 45 minutes, or until tender. About 110g dried beans will yield 250g cooked beans (reserve 150ml of the cooking liquid). This is also excellent if you want something different from, but still related to, mushy peas to serve with your fish and chips.
Ingredients:
2 tbsp Rapeseed Oil or Olive Oil
3 Brown Onions, sliced
1 tsp ground cumin
A generous pinch of hot chilli powder
250g of home-cooked Carlin Peas or 1 x 400 g can of Carlin peas, drained (reserving the liquid)
Salt to taste
Method:
Set a large frying pan over medium heat. Once hot add the oil and use to gently cook the onion for about 15 minutes, or until beginning to colour. Scatter over the spices, stir to combine and cook for 1 minute.
Add the carlin peas and about 2 tbsp of their cooking liquid. Bring to a simmer and, as the ingredients cook, mash them with a potato masher or flat-ended wooden spoon. Add more liquid a tablespoon at a time as the peas dry out and begin to stick.
After about 15 minutes you should have a thick, creamy, purée.
You can use as a dip or use in place of refried black beans in Mexican-style dishes.
