Red Bell Pepper Letcho

Ingredients:

1 tbsp vegetable oil
1 tsp hot paprika (or chilli powder)
675g yellow onion, thinly sliced
450g red bell pepper, cored and cut into strips
2 tbsp tomato purée

Method:

Combine the oil and paprika in an oval baking dish about 33 x 22cm in size. Fry for 1 minute then add the onions and stir to coat with the flavoured oil. Fry for 6 minutes, until softened.

Mound the peppers on top of the onions then cover the dish and simmer gently for about 6 minutes, or until the peppers have begun to wilt. Stir to combine then add the tomato purée and 2 tbsp water. Stir well to combine, bring to a gentle simmer and cook for 15 minutes, stirring occasionally. Serve hot.
