Ingredients:

750g cassava leaves
750g pork, cut into 4cm pieces
1 onion, chopped
3 garlic cloves, chopped
oil for frying
salt, to taste

Method:

Wash the cassava leaves well then either shred very finely or pass through a mincer.

Heat the oil in a pan, add the meat, onion and garlic and fry until golden brown all over. Add 250ml water, cover and cook over low heat for about 30 minutes, or until the meat is cooked through.

Now stir in the cassava leaves and pour in enough water to just cover all the ingredients. Bring to a simmer, cover and cook for 25 minutes.

Serve hot with rice and lasary voatabia (Tomato and Spring Onion Salad).
