Ingredients:
300g butter (or margarine)
200g sugar
400g brown sugar
2 eggs
1 tsp vanilla extract
560g plain flour
2 tsp baking soda
1 tsp salt
1 1/2 tsp ground cinnamon
300g quick-cook oatmeal
350g cooked pumpkin (use tinned or boil fresh pumpkin until tender)
150g chocolate chips
Method:
Cream together the butter and sugars until pale and fluffy. Add the eggs, one at a time, beating until thoroughly combined then beat in the vanilla extract.
Sift together the flour, baking soda and salt into a bowl. Add this to the creamed mixture, alternating with the pumpkin. Finally stir in the oatmeal and the chocolate chips.
Drop the resultant batter by the tablespoon onto a lightly-greased baking tray. Transfer to an oven pre-heated to 170°C and bake for about 10 minutes, or until cooked through. Allow to cool on the baking tray for 5 minutes before transferring to a wire rack to cool completely.
