Ingredients:
1kg pumpkin flesh
1kg sugar
freshly-grated zest of 2 lemons
juice of 2 lemons
1 tbsp freshly-grated ginger
Method:
Remove and seeds from the pumpkin flesh then cut into small dice and combine in a bowl with the sugar and ginger (tie this in a muslin bag for later removal). Cover with clingfilm and set aside to infuse over night.
The following day, remove the ginger then turn the remaining ingredients into a saucepan. Bring to a boil then reduce to a simmer and cook gently for 90 minutes. Take off the heat and allow to cool slightly then turn into sterilized jars. Secure the tops and allow to cool before storing for later use.
