Dumplings make an excellent addition to a whole range of soups and these pumpkin dumplings are now added to the collection of Dumpling Recipes presented on this site. These can be fried and served as an accompaniment or they can be added to a stew or soup about 30 minutes before that stew is done.
Combine the pumpkin, egg, salt, nutmeg and baking powder in a bowl and whisk to combine. Mix in the flour bring together as a soft dough. If you are using these for a stew then simply drop tablespoons of the mixture and drop into the stew about 30 minutes before it's time to serve.
If you are going to cook these separately then bring a pan of lightly-salted water to a boil and drop the dumpling mixture by the tablespoon into this (how many you make at once depends on the size of the pan). Boil the dumplings for about 10 minutes, or until cooked through then remove with a slotted spoon as you cook the next batch.
When all the dumplings are done melt the butter in a large frying pan and add the dumplings. Cook for about 8 minutes, turning often, until the dumplings are lightly browned. Transfer to a serving bowl, sprinkle the Parmesan cheese over the top and serve.
