Ingredients:
2kg green apples, peeled, cored and diced
2kg pumpkin flesh, de-seeded and diced
2kg tomatoes, chopped
180g garlic cloves, crushed
1 tbsp red chillies, finely chopped
1kg sugar
2 tsp sea salt
1 tsp ground cloves
1 tsp freshly-ground black pepper
1 tsp freshly-grated ginger
2 tsp mustard powder
1 tsp ground cinnamon
2l white wine vinegar
250g pitted dates, finely chopped
Method:
Combine all the ingredients in a large, heavy-based pan. Heat gently, stirring constantly, until all the sugar has dissolved then increase the heat and bring the mixture to a boil.
Reduce to a simmer and continue simmering until the mixture thickens and the fruit and vegetables are soft. Mash gently with a potato masher then spoon the mixture into sterilized and warmed jars.
Seal with vinegar-proof lids then set aside to cool completely and store in a cold, dark, cupboard for at least 1 month to mature before use.
