This is a very interesting recipe for a sodabread that is flattened and cooked in a similar way to Middle Eastern pita breads.

Ingredients:

500g plain flour
250ml sour cream
1 tsp salt
1 tsp sugar
1 tsp sodium bicarbonate

Method:

Sift all the dry ingredients into a bowl. Add the sour milk a tablespoon at a time, kneading after each addition until the mixture comes together as a stiff, but elastic dough.

Turn the dough onto a floured work surface then roll out to 5mm thick and cut into squares with a knife or large pastry cutter.

Heat a dry, non-stick frying pan until very hot. Add the proziaki and fry until golden brown on the base. Turn over and fry until cooked on the other side.

To eat, halve them (just like a bread roll), smear with plenty of butter and eat with bittercress and cucumber. They are also very good with butter and marmalade.
