Prawn Stuffed Avocados

Ingredients:

4 firm, ripe, avocados
500g medium-sized cooked and shelled prawns (shrimp)
1/2 medium red onion, finely diced
1/2 red bell pepper, finely diced
2 celery sticks, finely diced
2 hard-boiled eggs, diced
5 tbsp aioli mayonnaise
juice of 1 lime
salt and freshly-ground black pepper, to taste
cayenne pepper, for dusting

Method:

Slice each prawn in half lengthways (reserve a few for garnish). Combine the prawn halves in a bowl with the onion, radishes, bell pepper, celery, eggs, half the lime juice and the aioli. Mix thoroughly then adjust the seasonings to taste.

Halve the avocados and remove the seeds then peel them carefully. Drizzle the remaining lime juice over the avocado halves to prevent them from browning. Arrange the avocado halves on serving plates and stuff them with the prawn mixture. Garnish with the reserved whole prawns and a sprinkling of cayenne pepper then serve immediately.
