Potatoes in Fresh Tomato Sauce: An Irish recipe for an accompaniment of thick potato slices cooked in a tomato-based sauce until tender.

Ingredients:

900g potatoes, sliced thickly
3 tbsp olive oil
2 3 garlic cloves, chopped
550g tomatoes, chopped
2 tbsp sun-dried tomato paste (or tomato purée)
2 sprigs of fresh thyme
1 fresh bayleaf
2 tbsp fresh parsley, chopped
300ml vegetable stock, or water

Method:

Heat the oil in a heavy casserole dish. Add the onions and fry for about 4 minutes, or until softened but not coloured. Add the garlic and the tomatoes, bring to a simmer and cook for 3 minutes more then add the tomato purée along with the herbs and the stock or water.

Adjust the seasonings to taste, bring the mixture to a boil then reduce to a simmer and cook for 5 minutes before stirring in the potatoes.

Cover the casserole, then transfer to an oven pre-heated to 180°C and cook for about 90 minutes, or until the potatoes are tender and the sauce is thick.

Serve immediately.
