Potato Soup with Salmon and Chives is a traditional Irish recipe for a classic fish-based soup of salmon in a stock and milk base thickened with potatoes and flavoured with chives. Ingredients:
6 medium potatoes, peeled and chopped
170g salmon (a tail piece will do)
2 tbsp fresh chives, finely chopped
60g butter
1 onion, finely chopped
2 leeks, chopped
1 bayleaf
600ml chicken stock or fish stock
600ml milk
salt and freshly-ground black pepper, to taste
Method:
Place the salmon in a small saucepan then add enough water to just barely cover it. Allow to poach gently for about 10 minutes, or until the fish is just cooked.
Remove the fish from the liquid then take off the skin and remove the bones. Flake the flesh and set aside. Mix the poaching liquid with the stock.
Melt the butter in a large saucepan, add the onion and leeks and fry gently for about 6 minutes, until soft but not coloured. Add the potatoes, bayleaf, seasonings and the stock mixture. Bring to a boil, reduce to a simmer, cover and cook for about 20 minutes or until the potatoes are soft. Take off the heat, remove the bayleaf and purée in a food processor until smooth.
Pour the mixture back into the pan then add the chives, milk and salmon. Gently bring the mixture to a boil. Adjust the seasoning to taste, ladle into warmed soup bowls and serve.
