Potage de riz aux gombos (Rice Soup with Okra) is a traditional Congolese recipe (from Republic of the Congo) for a classic soup of spinach, okra and rice. Ingredients:

1 bunch of spinach, washed and chopped
10 young okra, stem ends removed and sliced into rings
5 tbsp rice, washed and drained
knob of butter

Method:

Bring a small pan of salted water to a boil. Add the spinach and okra and blanch for 10 minutes.

Drain and turn the spinach and okra into a clean pan. Add 500ml water and the washed rice.

Bring to a boil, reduce to a simmer and cook for 20 minutes. Add a knob of butter, divide between two bowls and serve.
