This is a dish that basically taco ingredients added to a bag of corn chips.. so tacos you can take with you on the go. It’s great for barbecues or outdoor occasions like Guy Fawkes Night. The ‘Mexican blend’ cheese is an American mix of grated cheeses that typically contains Monterey Jack, cheddar, queso quesadilla, and asadero. A mix of grated mozzarella and mild cheddar would work at a pinch. This recipe is easiest to make with small packets of corn or tortilla chips, where the packet becomes the holder for the dish. If you can only find large bags of chips then make pouches with kitchen foil and portion the chips into these.

Ingredients:

500g minced beef
3 tbsp taco seasoning
6 x 25g bags of corn chips or cheese-flavoured tortilla chips
60g shredded lettuce
2 roma (plum) tomatoes chopped, or any kind work
35g onion, chopped
100g cheddar cheese, Monterey Jack or Mexican blend cheese, grated
tomato-based salsa (optional), for serving
sour cream (optional), for serving

Method:

Combine the beef and taco seasoning in a large frying pan over medium heat.

Fry the beef, stirring and breaking up any clumps with a wooden spatula until the meat is nicely browned all over. Pour any excess fat from the pan.

Cut open each bag of chips on the long side then add in a scoop of the taco-flavoured meat along with lettuce, chopped tomatoes and chopped onion.

Top with cheese, salsa, and a dollop of sour cream.

Serve and eat immediately.
