Placki z Kwiatow Bzu (Polish Elderflower Pancakes)
Placki z Kwiatow Bzu (Polish Elderflower Pancakes) is a traditional Polish recipe for a classic snack of of milk, egg white, sparkling wate and flour pancake batter flavoured with lemon juice and elderflowers that's fried to cook. Ingredients:
140g plain flour
1 tsp baking powder
120ml milk
120ml sparkling water
50g vanilla sugar
1 egg white
200ml elderflower blossoms
1 tbsp lemon juice
butter, for frying
Method:
The longest part of this recipe is preparing the elderflowers. Pick mature sprays and when you get them home, crumble them between your hands to separate the blossoms from the stalks (the stalks can be bitter and unpleasant in flavour).
Sift together the flour and baking powder into a bowl. Stir in the vanilla sugar then beat in the milk and sparkling water. Beat the egg white in a bowl until stiff then fold in to the batter. Add the elder flowers and mix gently with a fork until they are coated in the batter.
Add the lemon juice then heat a little butter in a non-stick pan. Add a ladleful of the batter and spread out over the pan. Fry on one side until golden brown then flip over and fry on the other side. Transfer to the oven to keep warm as you cook the remaining batter.
