As the name suggests, this is a pizza made with fresh vegetables straight from the garden. It's at it's best at the end of summer where the choice of available vegetables is generally at its greatest.
Ingredients:
1 potato pizza base
1 batch special pizza tomato sauce
6 spinach leaves, trimmed and washed then drained and patted dry
1 tomato, sliced
1/2 green or yellow bell pepper, thinly sliced
1 baby courgette (zucchini), sliced
30g fresh asparagus tips
30g fresh peas, shelled (or frozen peas, defrosted)
4 spring onions, chopped
1 tbsp freshly-chopped mixed herbs
40g Mozzarella cheese, grated
2 tbsp freshly-grated Parmesan cheese
1 artichoke heart
oil for drizzling
salt and black pepper
Method:
Turn the potato dough onto a lightly-floured surface and roll lightly until it's about 25cm in diameter. Transfer to a lightly-greased baking sheet or pizza sheet and using your thumb and forefinger pinch the edge of the pizza to create a raised lip. Cover the dough with an even layer of the tomato sauce, going almost all the way to the edge.
Spread the tomato sauce evenly over the surface of he pizza, covering it almost to the edge. Arrange the spinach leaves evenly over the tomato sauce then set the tomato slices on top. Cover with the remaining vegetables then scatter the herbs over everything.
Combine the cheeses then scatter over the top of the pizza before placing the artichoke heart in the pizza's centre. Drizzle the surface with a little olive oil then season liberally.
Place in an oven pre-heated to 200°C and bake for about 18 minutes, or until the edges of the base are golden and crisp. Cut into wedges and serve immediately.
